Alton Browns Grilled Grilled Cheese

The first culinary star I had any appreciation for was Alton Brown. Watching his show, "Good Eats", on Food Network, back when we had cable, was such a refreshing change from the majority of the other cooking shows out there. I forget which comedian said it, but those other shows could best be described as cooking food with "Tools you don't have, ingredients you can't afford, and a kitchen bigger than your entire apartment!" Alton Brown was different. He showed us how to cook much more basic fair, but to cook it well, and understand the science behind it.

Good Eats has been off the air for several years now, but in this new age of internet personalities on social media Alton Brown has continued to grow. He has a podcast, "The Alton Browncast", that usually talks about food, which I listen to regularly. He also recently started up his own YouTube channel, which he posts new videos to on Wednesdays.

A few weeks ago he sparked my interest with his segment on Grilled Grilled Cheese Sandwiches, and last week I decided to give them a go.

Le Gruyere
Extra Sharp Cheddar

The recipe calles for 50% Gruyere and 50% extra sharp cheddar. I have been using great deal of Gruyere recently.

The shredded Gruyere and Cheddar are mixed with pepper, mustard, and paprika and then placed on grill spatulas lined with aluminum foil to contain the melted cheese.

Grilled Grilled Cheese Sandwhich

I used some of our regular home made whole wheat bread. We usually make a couple of loafs on the weekend for use during the week for lunches and such. The bread is spritzed with olive oil and grilled separately before having the melted cheese spread between two slices, wrapped in aluminum foil, and heated over indirect heat for a couple extra minutes to bring the whole thing together.

I burnt the bread a little bit, having it actually catch on fire for a second, but whats grilling without a little flame. They turned out well enough that I would try them again. You can to. Here is the Grilled Grilled Cheese Recipe on Alton Browns website.
